Overview

The course explores the procedures, functions and tools of management, as related to the hotel, restaurant and tourism sector of the hospitality management. Also presented are systematic approaches to Front Office procedures by analyzing the flow of hotel business from reservations process to check-in and checkout and settlements. Food and beverage operations and management, including purchasing, receiving, issuing supplies, food production, budgeting and cost control, sanitation, and equipment selection and maintenance will also be examined. Emphasis will be placed on the foundations and applications of housekeeping operations, yield management and on the examination of the legal aspects of hospitality management.
