    Chemical properties of the minor components in foods, naturally existing or intentionally added, will be discussed with a variety of functions including flavor, texture, organoleptic properties as well as health-promoting functions.

    Course Objectives
    Basic knowledges on chemical nature and functions of the minor food components will be aquired by the class.
